Meatless Baked Ziti


My meatless baked ziti absolutely blew everyone away last night. It’s amazingly simple to put together, but a little on the pricy side.

For this vegan baked ziti recipe you will need:

1/2 Cup of Textured Vegetable Protein

3/4 Jar of your favorite tomato/marinara sauce

About 6-8 oz of dry penne or ziti

3 slices of chao tomato cayenne cheese

3 slices of provolone cheese ( i used the follow your heart brand)

Any veggies of your choice (mushrooms, carrots, eggplant, squash, zucchini etc)

1/4 an onion

2 cloves minced garlic.

1 T. of olive oil

1/2 tsp of onion powder

pinch of cumin

1 -2 C. vegetable broth or stock (I use better than bullion)

Salt to taste


1. Preheat your oven to 425. Set a pot of water to boil for your pasta. Boil until aldente and set aside.

2.  Add half your olive oil to a medium sized skillet on med high heat.

3. Saute your garlic and onions in the skillet until your onions are translucent.  If you have any other veggies you want to add, add them now.

4. Add the tvp to the skillet along with the remaining olive oil. Let the flavored oil from the pan coat the tvp completely and saute until the TVP has browned a little on the edges.

5.  Pour in your vegetable broth. Add your cumin, onion powder, and salt to taste.  Bring to a simmer and then reduce the heat to medium low.  Let your TVP simmer for about 10 minutes.

6.  Spray a 8 x 8 baking dish with some cooking oil.  Pour in your drained pasta.  Add your tomato sauce and tvp mixture.

7. Top with your chao cheese slices. You do not have to use chao cheese. There are many varieties of vegan cheese, so pick the one whose flavor YOU like. I hate daiya and tofutti cheese products, so you will never see them mentioned in my recipes. But if you like daiya, USE DAIYA GURL :).

8. Bake for about 35 minutes or until the top becomes melty and delicious. If your variety of vegan cheese isn’t melting as quickly as you like, I suggest turning your broiler on high for about 2 minutes.
