Eggless Cornbread (Vegan Cornbread)

There’s no way I could post vegan collard greens without including an eggless cornbread recipe. What would a Sunday be without cornbread? This cornbread is moist and sweet. If you’re one of those weirdos who don’t like your cornbread sweet, I suggest substituting the sweeteners for a spoonful of nutritional yeast and adding a bit of extra salt.


For this vegan cornbread you will need:

2 cups of cornmeal

1 cup all purpose flour

2 tsp of apple cider vinegar

2 cups cashew milk ( or any other non dairy milk)

1/4 tsp of baking soda

1/3 c. corn oil

Half a round of coconut sugar    (You can buy them on amazon or find them at your local Asian market)

1 T of black strap molasses

1 T of maple syrup

1/2 c. of whole kernel canned corn drained and rinsed (optional)

Salt to taste



  1. Preheat your oven to 350 degrees F.
  2. Put your cornmeal into a dry, high powered blender such as a blendtec or vitamix. Blend on high until your cornmeal is fine. This step is optional; however, I believe it produces a much softer and finer cornbread. If you enjoy the typical grainy texture of cornbread, feel free to skip this step.
  3. Put your ground cornmeal, baking soda, salt, and flour into a bowl. Mix them thorougly.
  4. In a microwave save mug, heat your cashew milk, molasses, maple syrup, and coconut sugar for about a minute at a time. After each minute, stir the mixture and continue heating. Do this until the coconut sugar is completely dissolved into the milk.
  5. Remove the mug from the microwave. Pour your oil and ACV into the mug. Wisk until slightly frothy.
  6. Pour the frothy mixture into the dry ingredients and mix until smoothe.
  7. Fold in your corn. If you do not like corn in your corn bread, skip this step :).
  8. Oil and 8 x 8 baking dish OR use a muffin tin. Pour your mixture into the pan and bake for 30-40 minutes or until your bread passes the toothpick test.
  9. Serve with your favorite syrup, jam, or greens :).
